As far as I’m concerned it’s still summer, and this recipe is the perfect way to keep that summer feeling going a little bit longer!
This light and refreshing citrus vinaigrette is easy, simple, and can be made ahead up to a week in advance. A blend of orange, lemon, and lime juice act as the acid, and using a clean-flavored oil like grapeseed oil maintains the refreshing citrus taste. Try not to use olive oil if you can, although olive oil is great for most salad dressings, its strong flavor will overpower the citrus.
During the summer months I love to keep this dressing stocked in my fridge so I always have it on hand. And besides, this citrus vinaigrette will taste delicious no matter what season you make it! ;-)
