Citrus Vinaigrette

As far as I’m concerned it’s still summer, and this recipe is the perfect way to keep that summer feeling going a little bit longer!

 

This light and refreshing citrus vinaigrette is easy, simple, and can be made ahead up to a week in advance.  A blend of orange, lemon, and lime juice act as the acid, and using a clean-flavored oil like grapeseed oil maintains the refreshing citrus taste. Try not to use olive oil if you can, although olive oil is great for most salad dressings, its strong flavor will overpower the citrus.

 

During the summer months I love to keep this dressing stocked in my fridge so I always have it on hand. And besides, this citrus vinaigrette will taste delicious no matter what season you make it! ;-)

Citrus Vinaigrette

Prep Time: 5 minutes

Yield: 3 cups

Ingredients

  • 2 large oranges, juice and zest
  • 1 lemon, juice and zest
  • 1 lime, juice and zest
  • 1 large shallot
  • 2 large garlic cloves
  • 2 cups grapeseed oil
  • Salt and pepper to taste

Instructions

  1. Combine all juices and zests in a blender with the garlic and shallots. Blend until smooth.
  2. While blender is on, slowly add in oil to emulsify into vinaigrette. If the oil is added too quickly, the emulsion will break!
  3. Season with salt and pepper to taste. I recommend starting with 1/2 tsp salt and 1/4 tsp black pepper to start, and adjust as desired.
